Reine Claude Coffee Cake

Here’s a list of allergy-friendly recipes I’ve developed or modified from existing sources. Most of the recipes below do not contain the following allergens: milk and raw/undercooked eggs, peanuts and tree nuts. Please adapt them as necessary to accommodate your allergy needs (e.g., substitute gluten-free flour).

My recipes include a mix of American cooking measurements (i.e., cups, teaspoons) vs. more European measurements (grams, ml, etc.). If you need it, Clotilde Dusoulier from Chocolate and Zucchini has prepared some excellent information on conversions.

Traditional Swiss foods are marked with an “(S).”

      Hi Michael! I used a recipe from Epicurious.com (http://www.epicurious.com/recipes/food/views/Empanada-Dough-230786). Instead of butter, I used the same amount of dairy-free margarine. Instead of 1 egg, I used 1 tablespoon of flax meal mixed with 3 tablespoons of water (mix and set aside for a few minutes, so the mixture thickens). The recipe calls for white vinegar, but I used cider vinegar. I hope this helps, and please let me know if you need anything else. Many thanks for visiting my blog. -Heddi

    I have s 8 year old boy who is dairy intolerant…. But desperate for a birthday cake the same as the Sara Lee gateau… Please please please help me to replicate this…. It’s all he’s asked for…..
